Equipment
- 1 Slow cooker / Crock Pot
- 1 Medium bowl
- 1 Mixing spoon
Ingredients
- 3 LB Boneless pork shoulder
- 2 tsp Ground cumin
- 2 tsp Garlic powder
- 2 tsp Onion powder
- 2 tsp Paprika
- 1 tsp Ground black pepper
- 1.5 tsp Salt
- 2 tbsp Olive oil
- 1 cup Stock
- 12 oz Diet Coke/Soda Optional
Instructions
- Add pork shoulder to slow-cooker.
- In a medium bowl, combine cumin, garlic powder, onion powder, paprika, salt, pepper and olive oil until it comes together into a thick paste. Spread it all over the pork shoulder. Let sit for 10-15 min.
- Pour the stock and diet Coke into the crockpot and place marinated pork shoulder gently inside.
- Cook on high heat setting for 5-6 hrs until fork tender.
- When ready, shred the pork shoulder apart with two forks and serve. Goes well with cauliflower mac and cheese and a side of vegetables!
